And MAN was it good... Tasted better then steak...
I'm hooked... Also tried a nice venison chop... Good too!!!
I dont know how I was a vegitarian for two years....
Plus a few Mothers Milk's from Keagan Brew in Kingston NY...
My first beer in a couple weeks...
blah blah blah...
I really love living at a ski area.... :)

The chef showed us the suppliers list(menu?)....
It had Caribou on it.... He said he was getting some soon... The list read like a friggin zoo.. I mean.. Snake and ostrich... Tons of stuff... It kinda freaked me out...
Now Elk I can see... There were Elk in New York State until 100 or so years ago.. So it's almost normal.. You could probably raise Elk in the northeast..
But Caribou ??? Don't they live in arctic zones....?
Should I try it when he gets it?? Is kinda like getting a Maine lobster in Hawaii?

Id definately say try it! Up in alaska i think i had it in some form with every meal...But yeah, from what i understand caribou live in colder climates up north.
However, ELK are making a comeback in the Northeast...even down into parts of western and central PA!
That place sounds cool :D

I like rattlesnake. Figures because I like gator. I also have tried bear, moose, venison, buffalo, elk, and caribou off the top of my head. I've had shark fin soup in japan too. I love animals...they taste great!

A friend of mine on a safari/kilmanjaro/middle east trip three years ago was at a restaurant in Africa (Nairobi I think) called The Carnavore.
Estentially you sat a table with a 3 tier lazy susan rig in the centre stacked with dipping sauces and a flag on the top. If the flag is up it is feeding time. The wait staff walk around with big chunks of meat on a large skewer in one hand and a big knife in the other calling out the name of the beast they are sporting. "Zebra, gazelle, wildebeast etc etc." You signal them they come over a cut off a hunk of the sarengheti's finest pointing you in the direction of the right sauce. When the flag is tipped over you are on a break. If the flag is onthe table you are finished. He said it was awsome.
I have had elk, carabou, moose, venison lots of game bird. Never bear. Bear always kinda freaked me out. Driving in northern ontario in the fall you see people with skinned bears curing/draining in their front yard. They kinda look human.

Sounds like a Brazilian grill with really exotic choices. At the Brazilian grill the waiters carry around different meats on skewers and cut them onto your plate at the table. Yum. I have hear that S. Americans (Argentinians) eat more meat per capita than any other nationality.
Presumably people in U.S. eat more fat per capita. Supersize me, brother!

I'd say go for it. I've had fresh caribou in Quebec, plus some sausage brought back from a friend's hunting trip. I've also had a caribou tenderloin from a local exotic meat market -- I have the sense that it's one of those "novelty" items that carry a price premium, so they're usually kept in good condition since the customer shells out the $$$.

The minute I arrived in Buenos Aries I began eating beef... And had beef EVERY night for the whole 10 day trip....
Steak with eggs on tops, flank steak, stips steaks, steak fondue, steak tartar... blah blabh blah....
It was amazing!!!!
Well all except the hamburger I had that was horse - didn't find out until i asked the waiter... I found it disgusting... Tasted nasty...
Next time I got a hamburger - it was goat.... nasty too...
Moral of the story is.... DONT buy hamburgers outside the North America...

The Elk was $15.00 a plate...
The Pequot Museum at Foxwoods Resort in Mystic CT has a cafeteria that serves Elk and Caribou burgers for very reasonable cost. My elk-burger was very tasty.
This is a museum of Native American culture that is worth a day trip on it's own merits. The exhibits are superb, mind-blowing and the burgers are bonus material.

Everytime I go to the Sirloin Saloon I order Bison sausage as an appetizer. And when it is on special, I get the Bison Sirloin. Soooo good.

When I was at Killington a few years ago, we grabbed breakfast at a bar on the access road. They asked what kind of meat we wanted. We were given the choice between, ham, sausage, and Canadian Bacon. Well being an extremely proud Canadian, of course I ordered the Canadian Bacon. We ended it up with what I would call fried Bologne not bacon. I can tell you that if you come to Canada and order Bacon, we apparently don't serve Canadian Bacon. Just a little FYI so your not disappointed. Who knew.

Elk rules. I had in out in MT a few years back. My then GF was a vegan for 10 years, veg for 5 and had a peice and loved it.....she had recently aquired a condition that weakened and shrunk the sack around her heart because of her dietary preferances. Elk was the road to health!

Did you notice a difference in your energy level when you began eating meat again? I know a few people that USE to be vegans and/or vegetarians. They happen to eat meat again (not chicken/fish, but red meat), and notice a huge difference in their overall energy level.
I, for one, could NEVER do it. Meat is such a part of my diet. Wild game IS the best. So far, I've had elk, venison, bear, boar sausage, ostrich (very sweet taste), buffalo, and of course the ever-loving pig roast :)
I agree on the lobster issue. You can't beat Maine lobster. We had a little camp on a little island off the Maine Coast. My grandfathers' "lobster guy" would deliver the lobsters by his boat to our dock. They would dump the lobsters in the crate into the ocean. When it was time for dinner, he would scoop up a huge pot of ocean water and boil it, then get the lobsters straight from the ocean to the pot. Boy, do I miss that. That, my friends, is the reason why I will never order lobster in a restaurant - b/c I'd be afraid it wouldn't be as good.
Does anyone like venison heart/liver? YUM.....haven't had it for quite some time though. I heard that they recommend not eating any liver anymore, even in the younger deer (NOT FAWN, don't worry). Anyone have any input on this??

we call bacon bacon. It is long and sliced...has the meat and the fat.
Then there is back or pemeal bacon. Sometimes call canadian back bacon. It is way good. Less visible fat but oh so tasty. When in Toronto you MUST go to the St. Lawrence Market for a pemeal bacon sangdwitch. Yumm-o.

I can do beef liver only one way. Barbequed, basted which a good quality dijon or chanpagne mustard. Don't cook it too long or it gets tougher than leather and not in the good RunDMC way either.
Chicken livers are for carp and catfish fishing.

I stopped the whole veggie thing when I was out west on a ski trip... I just craved red meat... It's tough to describe...
I definately felt better after I chowed down on a steak... Sometimes it's tough to eat veggie correctly..
My Sister (the Doctor) doesn't eat red meat. She loves chicken, eats a ton of that - and lots of other good stuff... she's a good cook and very much into eating well. But she won't touch red meat.
I can get her have bacon and eggs once in a while.. I mean, we're talking bacon here.

I have to speak up on the veggie thing; I have been vegetarian for almost 10 years, 3 of those being vegan. It has been in the past 6 months that I started eating dairy again. I have so much more energy and power on a vegan diet then I do when eating dairy. I am very picky about what I eat and was never the junk food vegan/veggie. If I know I have a hard weekend coming up I usually eat more raw veggies then anything else.
I never like to tell anyone how to eat or live, but please stay away from the shark fin soup!!! Sharks are caught, fins cut off, and thrown back to slowly stave to death. Sharks have survived for millions of years and its very likely that I will see the extinction of large pelagic sharks in my life time.

I've had shark fin soup and it was delicious. But the place I had it served Shark EVERYTHING. We had shark steaks there too. You know me though Ispoiler, I am a red-meat eating American pig. I wakeboard all summer, burn plenty of fossil fuels and belch loudly. Sorry, I just can't help myself. ;)

Thats awesome - I just couldnt get it right.. Gained a lot of wieght... But I was doing dairy - so I ate cheese and drank a lot of milk...
I don't have the discipline to cook vegi and prepare for events where everyones eating meat...
What it taught me though was that I don't always need meat at meals... I eat a lot less meat now then I used to... Don't hinks twice about have humus and pita for lunch or a nice black bean veggie or ****aki burger...
So it's a good thing...
About the sharks... I gave up eating high on the food chain... I havent had game fish in years...

I gave up meat twice. The last time for almost 2 years. Tho I did have fish and eggs (on occasion) so not total veggie. It started off with getting sick everytime I ate red meat. Gave that up, doctors could not figgure it out. Then chicken made me sick. Still no answers. Gave up that up. Then....Pork turned on me. Which was tough cuz in my house chicken is the "other white meat". So gave that up.
I embraced the veggie (with fish) thing but then started to become iron difficient over time even with taking supplements. So now I am back on the flesh. Like you DMC I have learned to not eat as much meat, especially red meat. Once in a while I have the red meat but I have to be prepared to pay for it. Funny tho as I think about it I don't think game like moose, and venison ever made me sick.
I am starting to read Eat Right for your Type...hopefully that will shed some light.

Scrapple: The true breakfast of Champions. I enjoy mine (like all sane E PA'ers, no scrapple lovers west of Tpke tunnels) crispy on the outside and mushy on the inside. I also enjoy it topped w/ maple syrup w/ a reservoir of ketchup on the side. Ohhhh, yeah. Call it a fusion of PA Dutch and New England.
Hey Affix, our office mgr. says there is a diner in Blue Bell that has a scrapple sandwich! I've been broke at school more than once and made me a few of them!!
Then chicken made me sick.
My second year of gong veggie... My Mom harrassed me into eating turkey on Thanksgiving... I ate a bunch and got sooooooooooooooo sick it wasnt even funny... My inside just couldnt handle it...

Its as Jersey as sitting on the front stoop or grabbing a late bite to eat at the diner. Its meat that goes with eggs, but it isn't ham or bacon or even sausage. If you ask someone outside of the state what it is, they've probably never heard of it. But call it by name in these parts and you can almost smell it sizzling.
"PORK ROLL"
Uncover the canvas wrapping, slice it thin, make three small cuts at the edges so it doesn't curl up and grill away. Mmmmmmm. Nothing taste or smells quite like it, even though many of us may not exactly know what the heck it is.
Pork roll is commonly known as Taylor Ham, whether Taylor Provisions in Trenton makes it or not ---its just one of those Jersey things. In fact, its so Jersey, you cant buy it anyplace else in the country - or in the world, except in the tri-state area.
So what's a displaced New Jerseyan to do when the craving hits and your relocated to somewhere like Des Moines or Boise where the term "pork roll" could mean bologna with mayonnaise on a hot dog bun?
Well, thanks to our own local pork roll queens, Donna Beers of Port Murray and Pattie Weaver of High Bridge, you can order large rolls of Jersey's finest, online and ship it fresh - not frozen - to poor deprived Mom in Florida, Junior at school in Indiana and Sis in Scottsdale. Finally, (http://www.porkrollxpress.com) a dot.com that fulfills a real need.
"Pattie's son who is in the army in North Carolina," recalls Beers" asked his wife Geri, to pick up a pork roll at the local market. Geri comes back and tells him, "They never heard of pork roll." So we found out the only place you can buy it is in New Jersey."
Beers says she and Weaver talked about for awhile, and then her own son moved to Colorado and complained he couldn't find any pork roll. "That was it. We finally said, "Let's do it. Let's put up a Web site and see what happens."
That was 2 1/2 years ago. Then came six months of product research, packaging designs and shipping decisions. In the meantime, Geri Weaver designed the Web site, and everything was in place by January 1999.
Beers says the most difficult aspect of the business was coming up with a packaging technique that made sense. They wanted to ship pork rolls fresh, and this meant purchasing Styrofoam-insulated boxes and wrapping the meat with frozen gel packs and freezer wrap. After a few test runs to friends in warm weather places like California and Florida, they got it down pat, and now the partners average 30-40 pork rolls a week (100 a week during Christmas), shipping by three-day select.
'Pork Roll Xpress' recently redesigned Web site makes it easy and fun to shop, and what's more, it's a hoot. There are recipes and even lyrics to a song describing the incomparable experience of eating pork roll. The Web site doesn't offer Loeffler Gourmet Inc. brand, as of yet, but the Trenton-base deli meat company has been in business for more than 50 years and has its own pork roll story to tell.
"A rough guess is that our annual pork roll sales average 500,000-750,000 pounds," says general manager Gary Rutherford. Loeffler not only sells to commercial venues, it supplies more than 300 New Jersey school districts with pork roll. "Some school districts glaze and bake pork roll like ham," he says "and they serve it with macaroni and cheese."
Loeffler's version is mild, but Rutherford says flavors can range from very mild to tangy to spicy, depending on the maker. He also notes that his company now is offering a link version, so that people can cook pork roll on grills, just like hot dogs.
As for the self-described pork roll queens, after two years of sharing New Jersey's best with the rest of the world, Beers says business is so good, they are thinking of hiring another person to help with the shipping process. For something that's so hard to describe, pork roll is a mighty popular product - especially for those who can't get their fix from far away. Maybe it's just a Jersey thing, but hey, we know how to share.

I gotta be honest... I don't eat porkroll anymore... Back in the day.. I used to have a porkroll, egg and cheese sandwich on a portugues roll every morning..
TIP: When frying porkroll it's important to make a cut in it so it doesnt shrivel up...

Of course, a dirty jerzer told me this so I don't claim it as fact.

Can one of you "in the know" find a picture of a cooked pork roll? I seach and they all look like egg rolls, or the pork roll still in a bag.
I always thought bacon was the purest form of pork enjoyment... could I have been in the dark all these years?

Man, i have'nt done the old walk around in years, i just go there for consumption purposes now a days. the new havana is nice a big. food is still way over priced. i more of a jon & peters or frans type. Martines is a nice small, quiet place. Great town. Did i read its like one of the last art colonies in the US or something?
I used to work on the mule barge ride for a few summers. Lots learned including that Washington used New Hope and Bowmans Tower to spy on the Hessians, that mules on the loose can run for miles even into crowded streets and even have the power to take the slack out of a tow rope and flip a woman on her bike into the canal (oh that was awesome). A few mule skinner songs too: Whoa, mule whoa, I'm done with you forever, you aint no good, you never was and you never will be neither..." :cool:
