I just had an Elk Chop....
And MAN was it good... Tasted better then steak...
I'm hooked... Also tried a nice venison chop... Good too!!!
I dont know how I was a vegitarian for two years....
Plus a few Mothers Milk's from Keagan Brew in Kingston NY...
My first beer in a couple weeks...
blah blah blah...
I really love living at a ski area....

U Should try Caribou or "Rudolph" as i like to call it.

The chef showed us the suppliers list(menu?)....
It had Caribou on it.... He said he was getting some soon... The list read like a friggin zoo.. I mean.. Snake and ostrich... Tons of stuff... It kinda freaked me out...
Now Elk I can see... There were Elk in New York State until 100 or so years ago.. So it's almost normal.. You could probably raise Elk in the northeast..
But Caribou ??? Don't they live in arctic zones....?
Should I try it when he gets it?? Is kinda like getting a Maine lobster in Hawaii?

Id definately say try it! Up in alaska i think i had it in some form with every meal...But yeah, from what i understand caribou live in colder climates up north.
However, ELK are making a comeback in the Northeast...even down into parts of western and central PA!
That place sounds cool

The chef is awesome.. Midweek his 12 year old pitbull runs around...
It came with a hash made with some really good sausage...

I like rattlesnake. Figures because I like gator. I also have tried bear, moose, venison, buffalo, elk, and caribou off the top of my head. I've had shark fin soup in japan too. I love animals...they taste great!

A friend of mine on a safari/kilmanjaro/middle east trip three years ago was at a restaurant in Africa (Nairobi I think) called The Carnavore.
Estentially you sat a table with a 3 tier lazy susan rig in the centre stacked with dipping sauces and a flag on the top. If the flag is up it is feeding time. The wait staff walk around with big chunks of meat on a large skewer in one hand and a big knife in the other calling out the name of the beast they are sporting. "Zebra, gazelle, wildebeast etc etc." You signal them they come over a cut off a hunk of the sarengheti's finest pointing you in the direction of the right sauce. When the flag is tipped over you are on a break. If the flag is onthe table you are finished. He said it was awsome.
I have had elk, carabou, moose, venison lots of game bird. Never bear. Bear always kinda freaked me out. Driving in northern ontario in the fall you see people with skinned bears curing/draining in their front yard. They kinda look human.

Sounds like a Brazilian grill with really exotic choices. At the Brazilian grill the waiters carry around different meats on skewers and cut them onto your plate at the table. Yum. I have hear that S. Americans (Argentinians) eat more meat per capita than any other nationality.
Presumably people in U.S. eat more fat per capita. Supersize me, brother!

I'd say go for it. I've had fresh caribou in Quebec, plus some sausage brought back from a friend's hunting trip. I've also had a caribou tenderloin from a local exotic meat market -- I have the sense that it's one of those "novelty" items that carry a price premium, so they're usually kept in good condition since the customer shells out the $$$.
